Vineyard Select XT Rosé
This wine underwent an Extended Tirage, meaning it was kept in Tirage for an additional 6 months before disgorging. The longer Tirage period contributes to a smoother wine with heightened biscuity characteristics. I believe that the XT grape varietal integration has resulted in a more rounded mouthfeel.
The Syrah grapes were initially foot-stomped, then destemmed, and subsequently fermented in stainless steel. After fermentation, they were gently pressed.
Each varietal of fruit was whole-cluster pressed within two hours of harvesting. The pressing cycle was intentionally prolonged to achieve a gentle extraction of flavors and colors. Every varietal was fermented separately, with the Cabernet and Malbec in stainless steel tanks and the Merlot in neutral French oak barrels. We employed Cross Pitch Fermentation to maximize the development of flavors.
